I use to use white meat, until I found boneless legs, there nicer, cheaper and have more flavour, if you dredge the meat in flour before sauteing, you will have enough binder for the sauce, I use half sweet marsala and broth, simmer lightly add back the chicken and simmer for 5-10 minutes, until done, this tightens up the sauce
