Can you start homeschooling during the school year?
Can I start home schooling my daughter now (she is having some mental health problems) or do I have to wait until the beginning of the next school year? And where can I find a curriculum that will pick up where her public school leaves off?
We live in Texas

If you do a search on questions that have already been answered, you will find so much info. on this.
Briefly - YES. Each area has its own rules so you'll need to check there. Texas is a great state to homeschool in, btw.
Homeschool and homestudy are not exactly the same thing. IF you want to do exactly what your local school is doing and continue on that path, then go to your district office and tell them you want to put your daughter on homestudy. They'll give you all materials and assignments, you will arrange to turn in the work and meet with a teacher once a week.
Homeschooling is wide open to however you choose to educate your child. Try a packaged curriculum at first if you need to, then figure out what is best for your family. See this website for guidance: hslda.org
You just write a letter to your school and district informing them of your decision. They don't own your child or you. The law says that your child must receive an education, not by whom.

well you might wait till the next year because they only have about a month left to go. I think you should wait because she only has 1 more month in school anyway so you have that much more time to get prepared! You can pick up the material at many book store and Madel's which is a christian book store and they sell all of it there. But go to the stores first and figure out what you want DO NOT BUY IT FROM THE STORE!!!!!!!!!!!!! Get home and go on Craigslist or ebay and buy is for 1/4 of the price! So if you wait you will have all summer to prepare and have everything the way you want it. Plus if you start right now then you are going to have to worry about what she has learned and what she hasn't learned. Cause public schools don't teach everything home schooling can. 1 more month wont hurt anybody. Plus you have that much longer to get prepared.

TX is the easiest state to homeschool in. All you have to do is withdraw her from school. TX does not oversee homeschooling at all.
As for curricula, I suggest taking several weeks off to deschool first. Most recommend a week per grade. so if she is 7th grade, take 7 weeks off. If you are near the end of the school yr, I would probably just withdraw her now and start back up in the fall, other tan maybe doing some fun field trips.
This is the time of yr that a lot of organizations are having used curriculum sales and homeschool conventions with numerous curricula vendors.
Check yahoo groups and http://homeschooling.gomilpitas.com/ for groups in your area, tips on beginning to homeschool etc.
